Zucchini, Tomato, and Organic Olive Oil Quinoa Salad

Here's a simple recipe to try this delicious and nutritious quinoa salad:

Ingredients:

  • 1 cup quinoa
  • 2 cups water or vegetable broth
  • 1 medium zucchini, diced
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons Dizem organic olive oil
  • Salt and pepper
  • Optional: fresh herbs (such as basil or parsley) for garnish

Instructions:

  1. Rinse the quinoa under cold water in a fine mesh strainer to remove its bitter taste.
  2. In a medium-sized saucepan, bring the water or vegetable broth to a boil. Add the quinoa, reduce the heat, cover, and simmer for about 15-20 minutes or until the quinoa is cooked. Remove the pot from the heat and let it cool.
  3. While the quinoa is cooking, heat 1 tablespoon of olive oil in a skillet over medium heat. Add the diced zucchini and sauté for about 5-7 minutes or until softened. Season with salt and pepper.
  4. In a large mixing bowl, combine the cooked quinoa, sautéed zucchini, and cherry tomatoes. Drizzle with the remaining olive oil and gently toss to combine. Adjust seasoning as needed.
  5. Garnish with optional fresh herbs if desired. Serve cold or at room temperature.
