OLIVE OIL SWEET POTATO DISH RECIPE
INGREDIENTS
1 kg sweet potatoes
200 grams Jerusalem artichokes
1 orange
1 carrot
12 pearl onions
1 sweet tablespoon salt
1 sweet tablespoon sugar
1/4 cup Dizem olive oil
2 cloves garlic
For garnish:
1 handful parsley
1 cinnamon stick
2 bay leaves
INSTRUCTIONS;
Peel and dice the sweet potatoes and carrots. Peel and slice the Jerusalem artichokes. Peel and slice the orange. In a pot, heat Dizem olive oil over medium heat. Add the onions, garlic, bay leaves, and cinnamon stick. Stir for a minute. Add the sweet potatoes, carrots, Jerusalem artichokes, and orange slices to the pot. Pour in the orange juice. Add salt and sugar. Stir well. Cover the pot and let it simmer over low heat for about 20 minutes or until the vegetables are tender. Once cooked, remove the cinnamon stick and bay leaves. Garnish with freshly chopped parsley. Serve hot and enjoy your Sweet Potato Dish!
